這道菜的創作靈感來自,孩子小時候喜歡吃媽媽做的香煎羅勒雞腿,坊間賣的芋泥鴨口感太過乾柴,總舖師於是修改成台菜風味的料理,把芋頭和紫金地瓜打成餡包覆雞腿肉去酥炸,呈現外酥內嫩的口感,是一道集合視覺效果和香氣、口感層次十足的創作料理。

The inspiration for this dish came from my wife’s pan-fried basil chicken thighs that my children loved to eat when they were little. The taro duck sold in the market was too dry, so the head chef modified it into a Taiwanese style dish. Taro and purple, gold groundnuts are stuffed than wrapped around of chicken lags and deep-fried to create a crispy texture on the outside and tender inside. It is a creative dish that combines visual effect with aroma and taste.
